Weekend Scenes and Cook-Up

We have reached yet another transition point in our crazy lives. As I write this, TDL is headed to Kingman, AZ for his “capstone project,” which is basically an internship, in the Emergency Department. He will be there more than half of this month, staying at the Travelodge and working 12-hour shifts. Then he is basically done with nursing school. Up next will be graduation, taking the NCLEX, and finding a job.

I, on the other hand, am just starting school– tomorrow. Gulp. I have no idea what to expect.

So this weekend, we tried to enjoy ourselves, get outside, take pictures, and cook a shitload of food.

Here are a list of the recipes we made, in case anyone wants to replicate our Sunday cook-up:
Well Fed‘s Egg Foo Yong (breakfast for both of us for the week)
Tapioca Puddin’
Chile Braised Pork Shoulder, using this recipe– without the taco, sub coconut oil for vegetable, and if you don’t want to hurt the paleo gods’ feelings, use broth in place of beer (we didn’t). This will be TDL’s dinners at the hotel.
Brisket (brining in the fridge for me to cook later in the week)
Well Fed’s Rogan Josh (my dinner for the week)
Nom Nom Paleo’s cabbage, mushroom, and bacon
and her Cauliflower and Carrot Mash
Roasted Rutabaga
Grilled Steak Salad for our weekend dinners
Bone broth
